Brazilian Vegan Feijoada.

From the Portuguese name Feijão (for “beans”), Feijoada is a typical dish in all former Portuguese colonies. It is considered the “national dish” in Brazil, or “o mais brasileiro dos sabores” (the most Brazilian flavors).
Consisting of beans, vegetables, rice and traditionally with a lot of meat (pork, beef, sausage, et cetera), Feijoada has been considered by a Brazilian chronicler of the 19th Century, França Júnior, to be not only a dish on its own but a small feast, a party of beans and flavors.
The word Feijão (beans) has been used for the first time in Portugal in in the 13th Century (way before the discovery of Brazil), but other varieties of this vegetables were already known to the Old World when the Europeans arrived in America in the beginning of the Modern Age. Simple to maintain and relatively cheap to produce, the bean cultivation spread out in the 18th Century. Beans became of the most important ingredient in the preparation for many many dishes.
Some similar stew of various vegetables, meat, rice and leaves can be found around the world: Cozido in Portugal, Casoeula or Bollito misto in Italy, Cassoulet in France or the famous Paella in Spain. Brazilians adapted it with what their taste buds was enjoying the most, and the Feijoada was born. But the dish was first unaccepted for European standard, considering that serving a dish with an omnipresence of beans should be reserved to inexpensive bars. For those who was not convinced, Luís da Câmara Cascudo, one of the most important Brazilian folklorist answered (1968) “Palate is not as universal as hunger”. In his view, special predisposition was necessary in order to savor the flavors of the dish, a similar cultural predisposition like the one needed to appreciate all the nuances of wines, or other traditional dishes. Today, Feijoada can be found everywhere in Brazil, from the most modest to the most sophisticated restaurants.

Brazilian Vegan Feijoada.

Servings: 2 hungry ogre or 3 small appetite
Notes: Vegan, Vegetarian, Dairy-Free, Gluten-Free, Kosher-Parve.
You will need…
  • ½ cup brown rice
  • 1 cup water
  • ½ cup tomato sauce
  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 2 clove garlic, crushed
  • 1 cup veggie broth
  • 1 big sweet potato, peeled and diced in chunks
  • 1 cup black beans, soaked overnight and cooked
  • 1 medium green or red pepper
  • 1 large tomato
  • 2 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon black chili flakes
  • ¼ cup cilantro (reserve some nice leaves for the decoration)
  • 1 tablespoon lime, juice and zest separated
  • 1 tablespoon orange, juice and zest separated
  • pink himalayan salt or kosher salt, to taste
  • 1 big orange, sliced
Steps and preps…
  1. Prepare the rice: In a medium pot, bring water and tomato sauce to a boil. Add rice and bring to another boil. Cover and simmer for 25-30 minutes, until all the liquid is absorbed.
  2. Meanwhile, prepare the stew: Heat olive oil in a large skillet over medium heat. Saute onions, pepper  and garlic couple of minutes, until it begin to soften. Toss in veggie broth, sweet potatoes, thyme, cumin and black chili flakes. Cover and simmer over medium heat until sweet potatoes are cooked and add in beans, tomatoes. cilantro, lime juice and orange juice. Let the stew heat for another five minutes.
  3. Serve with the rice, orange slices and cilantro leaves, topped with lime and orange zest.

*Tips: Like for every stew, to give it all its flavors, it is best to simmer it for many hours, on low fire in a thick clay pot.
